Some of the characteristics are weight, spur, resistance and the amount of eggs that the hen lays per cycle. The more eggs the hen lays the more profits it generates. The hen that does not lay an egg is known as a rooster.
If you find out how chickens inherit colors, you can win many coins in the contest and even raise the roosters and hens with your favorite color combination. They say that there is a very rare yellow color, but only one person saw it, like the Ho-oh of the Pokemon.
